PROBLEM TO BE SOLVED: To provide a livestock meat-processed food excellent in meat lump feeling, resilience, chewiness and juicy feeling, to provide chopped livestock meat usable for the food, and to provide a method for chopping the livestock meat and a mincing plate.SOLUTION: The method for chopping the livestock meat, which comprises processes of using a mincing machine having the mincing plate with two or more kinds of extrusion holes differing in diameters from each other, and simultaneously obtaining the chopped livestock meat with two or more kinds of diameters from the livestock meat, is provided. In this method, the mincing plate is preferably such that: the smaller-diameter extrusion holes are laid on an outer side of the mincing plate, it is preferable to have the extrusion holes each 2-4 mm in the diameter and those each 4-10 mm in the diameter.
