A process of producing an instant powder marinade mix for fish ceviche locally known as "kinilaw" is hereby disclosed which comprises the steps of cleaning the fresh spices (lemon, onion, ginger, Tabon-tabon (Atuna racemosa) and native lime (Citrus aurantiifolia) with a running potable water. Then, peeling and scraping of the aforementioned spices to expedite the extraction process. Mixing of the extracts to the coconut vinegar, then, spray drying of the collected extracts at 80 degree Celsius for 2 hours at 400 psi. Finally, packing the collected powder from spray drying in polyethylene bag.
