PROBLEM TO BE SOLVED: To provide means for further widely utilizing tea leaves by a new active ingredient by examining the change or the like in the contained components in a fermented tea caused by a preparing condition and the raw material tea leaves.

SOLUTION: The fermented tea is produced by fermenting the raw material tea leaves, especially second pluck tea leaves, by using Aspergillus usami by aerobic fermentation for 3-10 days, to generate a gallic acid-derived compound so as to be contained therein. The tea leaves can further be utilized widely by extracting and utilizing the gallic acid-derived compound.
