PROBLEM TO BE SOLVED: To provide a cereal processed food that is a cereal processed object excellent in an antiseptic power (a conservation property), and in which well immediately after processing, acid odor felt at a repast time after distribution at a low temperature and an atmospheric temperature, especially when re-heating by an electronic oven or the like is reduced and flavor is favorable.SOLUTION: An acid odor reduction agent of a cereal processed food including acetic acid is characterized in that a raw material of specific food product derivation is performed by subcritical water treatment in a high temperature high pressure condition of temperature of 130-230°C and pressure of 0.36-12.5 MPa and in a condition in which the raw material and water becoming a subcritical state are contacted for at least one minute, and a water-soluble solvent extract of an obtained subcritical water treatment object is included as an active ingredient, and the cereal processed food includes 10-220 pts.mass of the acid odor reduction agent by a nitrogen content conversion of the water-soluble solvent extract based on 100 pts.mass of an acetic acid content.COPYRIGHT: (C)2015,JPO&INPIT【課題】 防腐力(保存性)に優れた穀物加工物であって、加工直後はもとより、低温や常温にて流通した後の喫食時、特に電子レンジ等による再加熱の際に感じる酸臭を低減させ、且つ、香味が良好である、穀物加工食品を提供することを目的とする。【解決手段】 特定の食品由来の原料に対して、温度130~230℃及び圧力0.36~12.5MPaの高温高圧条件であって前記原料と亜臨界状態になった水を1分間以上接触させる条件にて亜臨界水処理を行い、得られた亜臨界水処理物の水溶性溶媒抽出物を有効成分として含有することを特徴とする、酢酸を含有する穀物加工食品の酸臭低減剤、;酢酸含量100質量部に対して前記酸臭低減剤を前記水溶性溶媒抽出物の窒素含量換算にて10~220質量部含有することを特徴とする穀物加工食品、;を提供する。【選択図】 なし
