PURPOSE: A producing method of colorless soy sauce is provided to mix silica gel with conventional soy sauce as an absorber after processing the silica gel with acid for improving the absorption rate.CONSTITUTION: A producing method of colorless soy sauce comprises the following steps: mixing solid state silica gel with a 20% hydrochloric acid solution, and settling the mixture for 2 hours at room temperature washing the silica gel using water for neutralizing removing the moisture from the neutralized silica gel, and spreading the silica gel for naturally drying, heat-drying, decompress-drying, or ethanol-processing the silica gel mixing and stirring the acid-processed silica gel with soy sauce at room temperature and collecting the colorless soy sauce, and washing the silica gel with water before mixing with the soy sauce again.COPYRIGHT KIPO 2012간장을 첨가제로 이용하려고 할 때 과량 첨가함으로써 색이 짙어서 식감이 떨어지는 것을 방지하기 위하여 탈색간장을 제조한다. 탈색방법은 실리카겔의 흡착력을 이용하는데 흡착력을 증가시키기 위해 실리카겔을 산성처리를 한 후 중화, 건조시켜서 사용한다. 농축액, 분말 등이 가능하다. 어묵, 치즈 등의 제조가 가능하다.
