The present invention provides a powder composition comprising alkali metal bicarbonate particles and amino acids as additives. The present invention also relates to a process for preparing alkali metal bicarbonate particles by spray drying an aqueous solution comprising 1 to 10% by weight of an alkali metal bicarbonate and an amino acid as an additive.
