The present invention relates to an alkali metal bicarbonate particle and an amino acid-containing powder composition as an additive. The present invention also relates to a process for the preparation of alkali metal bicarbonate particles by spray drying an aqueous solution containing an alkali metal bicarbonate of 1% to 10% by weight and an amino acid as an additive.
