The present invention relates to a recombinant collagen, having been produced in a plant or isolated plant cells generated by targeting at least one type of a collagen chain and an exogenous mammalian prolyl 4 hydroxylase (P4H) to a vacuole of the plant or the isolated plant cells so as to allow hydroxylation of said at least one type of said collagen chain by said exogenous P4H and not by an endogenous P4H of the plant or isolated plant cells, wherein said at least one type of a collagen chain is devoid of an endoplasmic reticulum retention signal and further wherein said at least one type of collagen chain is attached to a vacuole transit peptide.
