The present invention relates to an agricultural product quality prediction system and a method thereof and, more specifically, to an agricultural product quality prediction system to predict quality of agricultural products when respiration action of the agricultural products is constrained and a storage period thereof is extended, and a method thereof. According to the present invention, the agricultural product quality prediction system comprises: an environment measurement unit to measure an inner environment of a storage; an environment control unit to receive a measurement value measured from the environment measurement unit in order to control the inner environment of the storage to make the inner environment of the storage follow a set value inputted by a user; a data collection unit to store the measurement value and the set value; a data storage unit to store information of agricultural products stored in the storage; a quality prediction unit to store a quality prediction algorithm, which uses data stored in the data collection unit and the data storage unit to calculate a loss and a respiration rate of the agricultural products stored in the storage in real-time, and uses the loss and the inspiration rate to predict a remaining storage expiration, hardness, and acidity of the agricultural products in real time; and a data display unit to display the measurement value and a quality prediction result value including the remaining storage expiration, hardness, and acidity of the agricultural products, which are calculated by using the quality prediction algorithm. Accordingly, the quality of the agricultural products is predicted based on temperature/humidity measurement and respiration rate information inside the storage, thereby providing effects of increasing correctness, predicting main quality determination factors of a customer, such as the loss, the acidity, and the hardness, and being applied to various crops.COPYRIGHT KIPO 2018본 발명은 농산물 품질예측 시스템 및
