PURPOSE: A fiber carrier containing Bacillus subtilis and a method for manufacturing soybean fermentation foods using the same are provided to ensure excellent air permeability, workability, handling, and storage. CONSTITUTION: A fiber carrier for manufacturing soybean fermentation food contains Bacillus subtilis. The fiber carrier is formed of paper, paper towel, processed paper, fabric, or non-woven fabric. The Bacillus subtilis is Bacillus subtilis Natto. A method for preparing the fiber carrier comprises: a step of preparing Bacillus subtilis culture liquid； a step of attaching the culture liquid onto fibers； a step of drying the fibers； and a step of forming endospores from the Bacillus subtilis.본 발명은 낫토, 청국장, 메주 등 콩 발효식품의 제조를 목적으로 하는, 바실러스 서브틸리스(Bacillus subtilis)를 포함하는 섬유질 담체(Carrier)및 이를 이용하는 콩 발효식품의 제조방법에 관한 것이다.본 발명의 섬유질 담체(Carrier)는 바실러스 서브틸리스를 흡수하고 보유한다. 상기의 섬유질 담체(Carrier)는 낫토, 청국장, 메주 등의 콩 발효식품을 발효하기 위한 바실러스 서브틸리스 종균을 제공하는 효과가 있으며, 발효식품 제조에서 반복적으로 사용하는 것이 가능하다. 또한 상기의 섬유질 담체(Carrier)는 통풍성, 가공성, 취급성, 보관성이 우수하기 때문에 발효에 편리하게 사용할 수 있다.
