PROBLEM TO BE SOLVED: To provide a new method for producing a poultry foodstuff in which a production process is short and disappearance of a taste component is hard to occur in comparison with dried shaving using dried poultry as material being a new soup stock material substituting for bonito and utilizing an original feature of material.SOLUTION: A foodstuff for soup stock is characterized by using a white meat being the de-greased poultry of chickens as material, and simultaneously performing a pressurizing step and a dehydration step using a drum dryer after a chopping step, in which water is 5-10 wt% and the thickness is 0.01-1 mm.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2017,JPO&INPIT【課題】素材本来の特長を生かした、鰹に替わる新たな出汁素材である、鶏節を原料とする削り節と比較して、製造工程が短期間であり、うま味成分の消失が起こりにくい新規な鳥食材の製造方法の提供。【解決手段】原料として、脱脂された鳥肉が鶏肉のササミを用い、細断工程の後、ドラムドライヤーを用いた加圧工程と脱水工程を同時に行うことを特徴とし、水分が5~10重量%であり、厚さが0.01~1mmである、出汁用食材、およびその製造方法。【選択図】図1
