The present invention provides an apparatus for drying and puffing food ingredients comprising: a housing in which space for installation is formed and which has an air inlet, wherein the air is flowing, in one side and an air outlet, wherein the air is exhausted, in the opposite side, and a hatch, wherein the food ingredients are brought, in the other side； a rotary drum which is installed in the space for installation in the housing across the inside to be rotated and arranged between the air inlet and air outlet and which has a number of vent holes on the cylindrical surface and transfers the food ingredients carried in through the hatch from one side to the opposite side and then discharge the food ingredients； an air blower which is installed in the space for installation in the housing and which sends air so as to move the air towards the rotary drum； and a heater which is installed in the space for installation in the housing so as to heat the air blowing from the air blower to the rotary drum. According to the present invention, the apparatus dries and puffs up food ingredients using hot air, and so vegetable tissue is harmed by microscopic physical damage so that water reabsorption can be easily done, thereby being able to process the food ingredients.열풍을 이용하여 식재료의 조직을 건조 팽화시켜서 식물성 조직에 미세한 물리적 손상을 주어서 수분의 재흡수가 쉽게 이루어지도록 식재료를 처리하는 것이 가능하도록, 내부에 설치공간이 형성되고 한쪽에는 공기가 유입되는 흡기구가 형성되고 반대쪽에는 공기가 배출되는 배기구가 형성되며 또 다른쪽에는 식재료를 반입하는 반입구가 형성되는 하우징과, 하우징의 설치공간에 내부를 가로질러 회전가능하게 설치되고 흡기구와 배기구 사이에 배치되며 원주면에 다수의 통기구멍이 형성되고 반입구를 통하여 반입되는 식재료를 한쪽에서 반대쪽으로 이송하여 배출하는 회전드럼과, 하우징의 설치공간에 설치되고 회전드럼쪽으로 공기가 이동하도록 송풍하는 송풍장치와, 하우징의 설치공간에 설치되고 송풍장치로부터 회전드럼쪽으로 송풍되는 공기를 가열하도록 설치되는 히터를 포함하는 식재료 건조팽화장치를 제공한다.
