The present invention relates to a method of production of a product chosen from among the butter biscuit of the type "small ", the sandblasted, having a fat content of greater than 5% by weight of the product and the biscuits of the type" breakfast " having a fat content of greater than 2% by weight of said product, a short pastry dough, a short or a pizza dough, comprising a step of the addition of a mixture of oil fluid in the preparation of said product, said mixture of fluid oil comprising or consisting of: - of 60 to 88%, preferably 70% to 85% by weight of oil fluid relative to the mixture, - of 5% to 30%, in particular from 6 to 30%, preferably of 8% to 15% by weight of water relative to the mixture, - of 3% to 11%, advantageously from 4% to 7% by weight of egg yolk, with respect to the mixture, - possibly less 1,4% by weight of a salt with respect to the mixture for butter biscuit of the type "small " and the sandblasted or less than 7% by weight of a salt with respect to the mixture for the biscuits of the type" breakfast ", the pastas sanded, the pastas broken or the pizza crusts.
