The present invention relates to novel compositions and methods for diagnosing or treating food allergies. The present invention discloses a novel approach to delivering food allergens to allergic patients, particularly by oral administration of agents that dissolve and release proteins in the stomach. The present invention makes it possible to treat food allergies by controlling the esophagus or oral exposure of the food allergen to the intestinal immune system. The present invention also allows for food inoculation to be performed to assess the limits of clinical reactivity without exposure to the esophagus and oral cavity.
