The present invention relate to a method for degrading keratin comprising the step of admixing at least 5g of keratin material with a protease and a reducing agent under controlled oxygen levels as well as keratin hydrolyzate so produced and uses thereof.La présente invention concerne un procédé de dégradation de kératine, qui consiste à mélanger au moins 5 g de matière kératinique avec une protéase et un agent réducteur selon des taux doxygène contrôlés. Elle concerne en outre un hydrolysat de kératine ainsi produit et ses utilisations.
