The present invention is directed to microbial oils that are enriched in their content of polyunsaturated fatty acids, their esters, their acid salts, alcohols formed therefrom, and/or aldehydes formed therefrom. The present invention is further directed to compositions containing the enriched microbial oils and methods of making and using the enriched microbial oils.
