PROBLEM TO BE SOLVED: To provide a method of manufacturing dried nameko whereby dried nameko in a good dried condition can be manufactured even if stem parts are long.SOLUTION: At least one kind of raw nameko mushrooms or nameko consisting only of raw stem parts is subjected to primary drying in a drier using a hot wind with a relative humidity of 50 to 60% and a temperature of 35 to 45°C. Next, main drying is performed using a hot wind with a relative humidity of 40 to 50% and a temperature of 50 to 60°C. The duration time of the primary drying is 4 to 6 hours. The duration time of the main drying should be 2 to 4 hours. A smoke-drying process in which the nameko is preserved at room temperature or low temperatures may be provided between the primary drying and the main drying.COPYRIGHT: (C)2012,JPO&INPIT【課題】茎の部分が長くても良好な乾燥状態の乾燥なめこを製造し得る乾燥なめこの製造方法を提供すること。【解決手段】生のなめこ及び生の茎部分のみからなるなめこの少なくとも1種を、乾燥機中で、相対湿度50%~60%、温度35℃~45℃の温風を用いて一次乾燥を行い、次いで相対湿度40%~50%、温度50℃~60℃の温風を用いて本乾燥を行う。この一次乾燥の継続時間は4~6時間とし、本乾燥の継続時間は2~4時間とするとよく、また、一次乾燥と本乾燥との間に、常温下又は低温下に保存するあん蒸工程を設けてもよい。【選択図】図2
