Disclosed is a surgical knife capable of preventing excessive etching and furthermore reducing the resistance to piercing; also disclosed is a manufacturing method thereof. The surgical knife is formed from a round bar (15) of austenitic stainless steel having a fibrous structure. The manufacturing method involves: a step for forming on the round bar (15) an operation portion (16), which is the portion of the knife for piercing or cutting open living tissue, such that the fibrous structure is oriented in the direction of the central axis (a); a step for forming polishing marks (24) on the operation portion of the surgical knife; and a step for processing by etching the operation portion (23) after polishing. Said etching processing forms multiple craters (26) in the operation portion but is only carried out to a degree at which no grooves form along the direction of the fibrous structure, and a silicon coating is applied from above.
