Provided are a method for manufacturing fermented ginseng or fermented red ginseng and an enrichment method of ginsenoside Rg3. The method for manufacturing fermented ginseng or fermented red ginseng comprises the following steps of: (a) inoculating ginseng or red ginseng with a strain of Lactobacillus paracasei ATCC 25180, a strain of Lactobacillus plantarum ATCC 39268, or a combination thereof； and (b) culturing the strain of the step (a) to biologically convert ginsenoside contained in the ginseng or the red ginseng to ginsenoside Rg3. According to the present invention, ginsenoside Rg3 of ginseng or red ginseng (in particular, ginsenoside Rg3(S)) can be enriched by converting the ginsenoside contained in the ginseng or the red ginseng through a simple process by using a particular strain. Moreover, according to the present invention, ginseng or red ginseng with superior efficacy containing enriched ginsenoside Rg3 (in particular, ginsenoside Rg3(S)) can be provided.본 발명은 (a) 락토바실러스 파라카제이 ATCC 25180 균주, 락토바실러스 플란타럼 ATCC 39268 균주 또는 이의 조합을 인삼 또는 홍삼에 접종하는 단계； 및 (b) 단계 (a)의 균주를 배양하여 인삼 또는 홍삼에 함유된 진세노사이드를 진세노사이드 Rg3으로 생물전환시키는 단계를 포함하는 발효인삼 또는 발효홍삼의 제조방법 및 진세노사이드 Rg3의 인리치먼트(enrichment) 방법을 제공한다. 본 발명에 의하여 특정 균주를 이용하여 간단한 공정으로 인삼 또는 홍삼에 포함된 진세노사이드를 전환하여, 인삼 또는 홍삼의 진세노사이드 Rg3(특히, 진세노사이드 Rg3(S))를 인리치먼트시킬 수 있다. 또한, 본 발명에 따르면 진세노사이드 Rg3(특히, 진세노사이드 Rg3(S))가 인리치먼트 되어 있는 우수한 효능의 인삼 또는 홍삼을 제공할 수 있다.
