PROBLEM TO BE SOLVED: To provide a pudding allowing an eater to feel rich body taste while suppressing oily feeling and having smooth palate feeling.SOLUTION: An oil-in-water emulsified substance for pudding satisfying the following conditions (a)-(c) is used for the pudding: the conditions are (a) containing 5-40 mass% of milk fat on the basis of oil phase (b) containing 50-250 pts.mass of lauric oil and fat based on 100 pts.mass of the milk fat and (c) containing 5-50 mass% of random ester exchange oil and fat of formulate oil containing &ge60 mass% of palm fractionated soft oil having an iodine value of 52-70 based on oil phase.
