PROBLEM TO BE SOLVED: To provide a method for producing a food by which the food produced through a heating step can suitably be produced by using an oil-in-water emulsified composition containing a starch.SOLUTION: The oil-in-water emulsified composition containing starch particles having >30 &mum particle diameter and changed into a gel with a thermoplastic gel having &ge37°C melting point is heated, dissolved, further cooled and solidified. The heating is preferably carried out at a temperature not lower than the gel melting point of the oil-in-water emulsified composition. The cooling is preferably carried out at a temperature not higher than the gelation starting temperature of the oil-in-water emulsified composition.COPYRIGHT: (C)2003,JPO【課題】 澱粉を含有する水中油型乳化組成物を用いて、加熱工程を経て製造される食品を好適に製造することができる食品の製造方法を提供すること。【解決手段】 粒径が30μmより大きい澱粉粒子を含有し、且つ融点が37℃以上の熱可逆性ゲルによってゲル化している水中油型乳化組成物を、加熱して溶解させ、更に冷却して固化させる。上記加熱は、好ましくは上記水中油型乳化組成物のゲル融点以上の温度で行い、上記冷却は、好ましくは上記水中油型乳化組成物のゲル化開始温度以下の温度で行う。
