Described is a novel method for the preparation of protein fibres from blood plasma comprising the steps of providing blood plasma, preparing a mixed aqueous medium by mixing the blood plasma and a hydrocolloid component comprising xanthan gum or gellan gum, bringing the pH of the said mixed aqueous medium to 3 –5 by mixing in the mixed aqueous medium a pH modulating agent to allow fibres to be formed in the medium, therewith providing a protein fibres comprising medium and fixating the protein fibres of the protein fibres comprising medium to provide a fixed protein fibres comprising medium.
