PURPOSE: A manufacturing method of color oil is provided to be able to safely and efficiently manufacture color oil including natural pigment without using organic solvents having toxicity, or expensive equipment. CONSTITUTION: A manufacturing method of color oil including natural pigment comprises (a) a step of extracting a refined material from a material including lycopene or beta-carotene and (b) a step of mixing the refined material yielded at (a) step with edible oil and stirring the mixture. In (b) step, the refined oil material is included at the amount of 1-5 weight% to the total weight of the edible oil. The color oil including natural pigment has the content of lycopene of 50-150 &mug to 100 g of color oil. The content of beta-carotene is 50-150 &mug.본 발명은 천연 색소를 포함하는 칼라 오일의 제조방법에 관한 것이다. 본 발명에 의한 칼라 오일의 제조방법을 이용할 경우, 독성을 지니는 유기용매나 고가의 장비를 사용하지 않고, 안전하고 효율적으로 천연 색소를 포함하는 칼라 오일을 제조할 수 있으며, 상기 제조방법에 의해 제조된 칼라 오일은 잔유물 없이 투명하고 아름다운 색택을 나타내며, 라이코펜 또는 베나카로틴을 높게 함유하고, 산패 방지 및 항산화능 등 기능성을 가지고 있으며, 관능성이 뛰어난 효과가 있다.
