The invention relates to a method for producing a concentrate of polymer proanthocyanidins with a concentration of more than 40%, characterised by the use of enzymatic treatments and by the absence of organic solvents and/or the extraction of organic solvents. This concentrate can be used as a functional ingredient, a food supplement, a cosmetic product and a pharmaceutical product.
