PROBLEM TO BE SOLVED: To provide a heat sterilizing apparatus capable of efficiently mixing steam into a raw material and heating it with a simple structure and facilitating maintenance, and a heat sterilizing method.SOLUTION: A steam blow-in type heat sterilizing apparatus is provided for blowing steam into a pipe 2 where a raw material to be sterilized flows, and mixing the steam with the raw material to sterilize the raw material while allowing a mixture to flow further downstream of the pipe 2.
