The present invention relates to a mixing device with improved sterilization and mixing efficiency of raw materials of food sauce. The purpose of the present invention is to provide a mixing device capable of mixing and subdividing raw materials of food sauce, wherein a vertical impeller rotated by a motor is provided inside the mixing device to easily mix raw materials of liquid food sauce, and a plurality of friction reducing protrusions having a pointed shape are formed on the surface of the impeller to reduce friction with the raw materials of food sauce (liquid) when the impeller is rotated, thereby improving mixing efficiency due to a rapid rotation. Accordingly, a dead zone (a part where raw materials are not mixed) which the impeller does not reach can be easily mixed by generating a large eddy due to the rapid rotation. In addition, the mixing device has a double structure and has a water pipe through which hot water or cold water is circulated, thereby mixing raw materials of food sauce under the same conditions (temperature) even if seasons are changed, and promoting sterilization of sauce by having an ultraviolet sterilization lamp inside the mixing device.본 발명은 식품소스 원료의 멸균 및 혼합 효율이 개선된 배합장치에 관한 것이다.이에, 본 발명의 기술적 요지는 식품소스 원료의 혼합(배합) 겸 소분이 가능한 배합장치에 관한 것으로, 액상의 식품소스 원료가 용이하게 혼합될 수 있도록 배합장치 내측에는 모터에 의해 회전하는 수직형 임펠러가 구비되되 임펠러 면상에는 뾰족한 형상의 마찰감소돌기가 다수개로 형성되어 임펠러 회전 시 식품소스 원료(액상)와의 마찰이 저하되어 빠른 회전으로 인한 혼합 효율이 개선되는 바, 이는 빠른 회전으로 큰 와류를 발생시켜 임펠러가 닿지 않는 데드존(섞이지 않는 곳) 또한 용이하게 혼합할 수 있는 특징이 있다.또한, 상기 배합장치는 2중 구조로 이루어져 온수 또는 냉수가 순환하는 수관이 형성되어 있기 때문에 계절이 변하더라도 동일한 조건(기온)에서 식품소스 원료를 혼합할 수 있는 것은 물론이고, 배합장치 내측에는 자외선 살균램프가 구비되어 소스에 대한 멸균 및 살균 도모가 가능한 특징이 있다.
