PROBLEM TO BE SOLVED: To provide an improved molding method for mass-producing hard breads (in particular, French breads), more specifically to provide an automated molding process with optimum conditions clarified for each of the operations in the molding process, so that the taste of products molded by machine can be comparable to that of products molded by hand.SOLUTION: The molding process of hard breads with use of a multi-stage molder includes the successive steps of: 1) adjusting the size and shape of bubbles in a dough by application of pressure to the dough from upper and lower sides by using a roller in a first molder; 2) rounding the dough by the rounding function of the molder; 3) stretching the dough under ductile pressure; and 4) tightening the dough such that the skin of the dough only is stretched, under weak pressure using a rolling pressure function alone several times. In the molding process, the dough is rolled such that gas is prevented from escaping and the bubbles in the internal phase
