The present invention relates to the use of whey protein isolate, montmorillonite, glycerol and sodium metabisulphite, for the preparation of biodegradable coating from natural and renewable sources, aiming at extending the shelf life of eggs sold in natura (in shell). ) stored at room temperature. Among the innovative features is the use of citric acid to adjust the coating ph to low values (3.2), which provides a coating with good mechanical characteristics and low water vapor permeability. Tests have shown that eggs coated with this solution had a shelf life greater than 40 days when stored at 25oC and 70% relative humidity.a invenção ora apresentada diz respeito ao uso de isolado proteico de soro de leite, montmorilonita, glicerol e metabissulfito de sódio, para a elaboração de revestimento biodegradável de fonte natural e renovável, visando a extensão da vida útil de ovos comercializados in natura (em casca) armazenados à temperatura ambiente. entre as características inovadoras está a utilização de ácido cítrico para ajuste do ph do revestimento à valores baixos (3,2), o que proporciona um revestimento com boas características mecânicas e baixa permeabilidade ao vapor de água. testes mostraram que ovos revestidos com essa solução apresentaram vida útil maior que 40 dias quando estocados a temperatura de 25oc e umidade relativa de 70%.
