PROBLEM TO BE SOLVED: To provide fatty acid derivatives with hyaluronan synthase inducing action and to provide a production method thereof.SOLUTION: The invention relates to fatty acid derivatives forming ester bond with fatty acid, fructose, and galactose. The fatty acid derivatives are produced by enzyme reaction during fermentation. The fatty acid derivatives increase hyaluronan synthase of epidermal cells and osteoblasts in the skin to increase hyaluronic acid. The production method thereof comprises adding Bacillus natto. of Nattomoto Hompo and Monascus of Beni Kouji Hompo to Psophocarpus tetragonolobus seeds to ferment, and treating the fermented liquid with protease. The fatty acid derivatives obtained show an excellent effect, and are applied as cosmetics, food formulations, and pharmaceuticals.SELECTED DRAWING: NoneCOPYRIGHT: (C)2016,JPO&INPIT【課題】 ヒアルロン酸合成酵素誘導作用を呈する脂肪酸誘導体およびその製造方法を提供する。【解決手段】 脂肪酸誘導体とは脂肪酸とフルクトースとガラクトーフがエステル結合している誘導体である。脂肪酸誘導体は発酵による酵素反応により生成される。この脂肪酸誘導体は皮膚の表皮細胞や骨芽細胞のヒアルロン酸合成酵素を増加させ、ヒアルロン酸を増加させる。製造方法はシカクマメの種子に納豆素本舗製の納豆菌と紅麹本舗製のベニコウジ菌を添加して発酵させた発酵液をプロテアーゼ処理する工程からなる。得られる脂肪酸誘導体は優れた効果を呈し、化粧料、食品製剤、医薬品として応用される。【選択図】 なし
