A process for preparing a reduced fat chocolate comprises the steps: (a) providing a powder comprising at least 15% by weight fat and at least 40% by weight of one or more particulate ingredients, wherein the fat at least partly coats at least a proportion of the one or more ingredients (b) mixing the powder with one or more further ingredients to form a mixture comprising from 20 to 90% by weight of the powder (c) refining the mixture and (d) conching the refined mixture.
