PROBLEM TO BE SOLVED: To provide dried noodle excellent in sticky feeling when taken.SOLUTION: In a process of producing the dried noodle, after parts near surfaces of noodle ribbons of raw noodle are pregelatinized, the raw noodle is cooled with water and then humidity-conditioned and dried.
