PURPOSE: Sliced can ham and a producing method thereof are provided to easily discharge the sliced ham with the constant thickness inside a can using a fork. CONSTITUTION: A producing method of sliced can ham comprises the following steps: filling a square frame with mixed meat(S120)； heating the mixed meat for hardening protein(S130)； freezing the heated meat(S140)； cutting the frozen meat with the constant thickness(S150)； inserting the sliced meat into a can container(S160)； and sterilizing the sliced meat inside the can container(S170).본 발명은 일정 두께로 슬라이스한 햄을 캔에 담아 멸균 공정을 거친 캔용 슬라이스햄 및 그 제조 방법에 관한 것으로, 배합육을 사각의 틀에 채워 넣어 충전육을 만드는 제1충전 공정； 상기 충전육의 단백질이 굳어지도록 가열하여 가열육을 만드는 가열 공정； 상기 가열육을 냉각시켜 냉각육을 만드는 냉각 공정； 상기 냉각육을 일정 두께로 잘라 슬라이스육을 만드는 슬라이스 공정； 상기 슬라이스육을 캔에 담는 제2충전 공정； 상기 슬라이스육을 멸균하는 레토르트 공정；을 포함하여 이루어지는 것을 특징으로 하는 캔용 슬라이스햄의 제조 방법을 제공한다.이에 본 발명에 따른 캔용 슬라이스햄 및 그 제조 방법은 캔 속에 이미 일정 두께로 슬라이스되어 있는 슬라이스햄이 담기도록 되어 있어서 포크 등을 이용하여 간편하게 꺼낼 수 있고, 꺼낸 후에도 별도로 자를 필요가 없어 편리성이 증대되는 장점이 있다.
