The present invention relates to a dried persimmon dryer configured to dry dried persimmons, and more specifically, to a dried persimmon dryer configured to use infrared rays to dry the dried persimmons so as to obtain the dried persimmons having an increased sugar content and excellent color sensitivity, wherein the dried persimmon dryer dehumidifies the dried persimmons through a cooling and thawing process using an evaporator and a condenser so that a flavor of the dried persimmons is maintained, and sterilizes the dried persimmons using a UV lamp. According to the present invention, the dried persimmon dryer comprises: a chamber (100) of the dried persimmon dryer; a door part (200) attached to one surface of the chamber and configured to perform an opening and closing function; a door packing part (300) configured to block external air and seal a door; an insulation part (400) made of glass wool and configured to maintain a temperature by surrounding an outer surface of the chamber; a cover part (450) disposed in the insulation part and configured to surround an outer surface of the insulation part; an air inflow part (500) through which air outside the chamber is introduced; an air discharge part (600) through which air inside the chamber is discharged; a UV lamp (700) configured to sterilize dried persimmons; an infrared lamp (800) configured to maintain illuminance to increase the sugar content of the dried persimmons while maintaining color sensitivity of the dried persimmons; a fan (900) configured to forcibly introduce and discharge air through the air inflow part and the air discharge part; a supplementary heater (1000) configured to increase an internal temperature of the chamber; an evaporator (1100) configured to evaporate a liquid refrigerant; a condenser (1200) configured to condense the liquid refrigerant; and a control device (1300) configured to control the UV lamp, the infrared lamp, the fan, the supplementary heater, evaporator, and the condense
