PROBLEM TO BE SOLVED: To provide, in regard to a dietary fiber-inclusion food product obtained from an apple as a raw material and focusing on the fact that only about 10% of fruit juice (water content) remains in the apple lee obtained by squeezing with a press-type squeezer, a novel use for an apple squeezed lee as a food product, and a method in which the yield of the fruit juice is increased as well as the food product waste material is decreased.SOLUTION: Provided is a use as a functional food for an apple squeezed lee powder obtained by crushing, after squeezing a fruit juice by about 90% or more with a press-type squeezer or the like, the apple squeezed lee into a size of 10 mm or less, and subjecting to drying, and pulverizing with a cyclone mill (airflow grinder) 7 to an average grain size of 45 μm or less, preferably 35 μm or less.EFFECT: By use of a press-type squeezer, the utilization rate of the fruit juice increased from the conventional 30% level to up to 90%, the cost and time for the drying of squeezed lee can also be reduced, and the road for the squeezed lee to an effective utilization other than farmyard manure can be pioneered.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2017,JPO&INPIT【課題】リンゴを原料とする食物繊維含有食品に関し、圧搾式の搾り機で搾ったリンゴの粕には果汁(水分)が10%程度しか残っていないことに着目して、リンゴの搾汁粕の食品としての新たな用途を提供し、果汁の収量を増大すると共に、食品廃棄物を減少させる方法。【解決手段】圧搾式の搾り機などで果汁を90%程度以上搾った後のリンゴの搾汁粕を10mm以下の大きさに破砕して乾燥し、サイクロンミル(気流粉砕機)7で平均粒径45μm以下、好ましくは35μm以下に微粉砕したリンゴの搾汁粕粉末を機能性食品として利用する。【効果】圧搾式の搾り機を用いることにより、従来30%ぐらいの果汁の利用率が90%迄増量し、搾り粕の乾燥の費用・時間も削減でき、搾り粕も堆肥以外への有効利用の道が拓ける。【選択図】図1
