1. A method of producing a canola protein isolate having a protein content of at least about 90 wt.% (N × 6.25), calculated on a dry weight basis, comprising:! (a) optionally (i) partial concentration of the supernatant from precipitation of the micellar mass of the canola protein to a concentration of 50 g / l or less, or! (ii) concentrating the supernatant from precipitating the micellar mass of the canola protein to a concentration of at least 50 g / l; ! (bI) adding a calcium salt; ! (i) to the supernatant from precipitation of the canola protein micellar mass in the absence of an optional step (a) to ensure electrical conductivity of 5 to 30 mS (millisiemens, ms) with the formation of a precipitate of calcium phytate, or!
