The present invention refers to the use of a composition comprising skin connective tissue from meat-supplying animals, as carrier for the incorporation of oil into meat-based products. The composition can be prepared by a procedure comprising a heat processing step or by a procedure not comprising a heat processing step. The present invention further refers to a process for preparing a meat-based product, wherein the process comprises preparing a composition comprising skin connective tissue and oil, and adding said composition to a meat mass or meat paste to prepare the meat-based product.
