PROBLEM TO BE SOLVED: To provide a dried bonito extract capable of suppressing the heat-deteriorated odor of food and drink products which contain the dried bonito extract and soy sauce.SOLUTION: The dried bonito extract includes phenols and fat, with a content of the phenols of 90 ppm or more and a content of fat as crude fat of 0.5 wt.% or less.
