PROBLEM TO BE SOLVED: To provide a water-in-oil emulsified composition for kneading, having good operability and allowing to obtain bread good in chewability and mouth digestion while retaining softness, and to provide the bread.SOLUTION: The water-in-oil emulsified composition for breadmaking includes in the whole water-in-oil emulsified composition, 25-45 wt.% of lauric oil and fat and/or a palm oil intermediate melting point fraction having 85-98% of solid fat content of 10°C, 45-85% of solid fat content of 20°C and ≤10% of solid fat content of 35°C. The bread is made by kneading the composition in bread dough.
