PROBLEM TO BE SOLVED: To provide a method for easily and accurately predicting the quality of green tea, particularly the conventionally difficult overall quality of product green tea.
SOLUTION: This green tea quality prediction method includes processes for pretreating green tea to obtain an assay sample, presenting the assay sample to an instrumental analysis to obtain an analysis result, converting the analysis result into numeric data to make a multivariate analysis, and predicting quality from the obtained analysis result. It is preferable to make a PLS regression analysis as the multivariate analysis on the instrumental analysis result of a plurality of green tea of known quality to prepare a quality prediction model, and the analysis result on the green tea of unknown quality is collated with the quality prediction model.
