PROBLEM TO BE SOLVED: To provide glutinous foods capable of inhibiting waxing or syneresis in glutinous foods obtained by mixing glucomannan with glutinous powder and applying to a bread dough or burned confectionery and can exhibit springy feeling after burning and a bread and burned confectionery exhibiting the springy feeling by burning such glutinous foods.SOLUTION: The glutinous foods according to the present invention contain glutinous rice powder of 20 to 40 wt.%, phosphoric acid crosslinked glutinous rice starch of 2 to 10 wt.%, phosphoric acid crosslinked tapioca starch of 2 to 10 wt.%, glucomannan of 0.2 to 1.0 wt.% and water of 55 wt.%. The glutinous foods are contained by packaging, sandwiching or particle mixing to a bread dough or burned confectionery dough and burning them to have bread and burned confectionery.SELECTED DRAWING: None
