PROBLEM TO BE SOLVED: To provide a method for producing tea containing 3-amino-1-ethyl glutarimide by processing tea containing theanine, and to provide the tea.SOLUTION: The present inventors devised a method of concurrently analyzing theanine and 3-amino-1-ethyl glutarimide by improving an amino acid analysis method, and by using the improved method, invented a method for producing tea containing 3-amino-1-ethyl glutarimide. The method for producing tea containing 3-amino-1-ethyl glutarimide comprises the steps of: adding green tea containing theanine into a pressure vessel, and blowing saturated steam therein to replace air inside the vessel with saturated heating steam after the air inside the pressure vessel is completely replaced with saturated heating steam, under an environment of no accompanying liquid according to the saturated vapor pressure curve, processing with saturated steam was performed to cyclize theanine contained in the tea by dehydration to be converted to 3-amino-1-ethyl glutarimide. By adding theanine to green tea to increase the theanine content and processing the tea, there could be produced 3-amino-1-ethyl glutarimide tea.SELECTED DRAWING: NoneCOPYRIGHT: (C)2016,JPO&INPIT【課題】 テアニンを含む茶を加工し、3-アミノ-1-エチルグルタルイミドを含む茶の製造法及びその茶を提供するものである。【解決手段】 アミノ酸分析法を改良してテアニンと3-アミノ-1-エチルグルタルイミドを同時に分析する方法を案出し、これを利用して、3-アミノ-1-エチルグルタルイミドを含む茶の製造法を案出した。テアニンを含む緑茶を圧力容器内に入れ、飽和蒸気を吹き込み、容器内の空気を飽和加熱蒸気と置換する。圧力容器内の空気が飽和加熱蒸気と完全に置換し、飽和蒸気曲線の下で、液体の水の随伴しない環境下で、飽和蒸気で処理を行い、茶に含まれるテアニンを脱水環状化させ、3-アミノ-1-エチルグルタルイミドに転換させ、3-アミノ-1-エチルグルタルイミドを含む茶の製造法を見出した。緑茶にテアニンを添加し、テアニン含量を高め、加工することにより3-アミノ-1-エチルグルタルイミド茶を作ることができた【選択図】 なし
