The present invention relates to a fruit juice manufacturing process and a manufacturing apparatus therefor and, more specifically, to a fruit juice manufacturing process and a manufacturing apparatus therefor, which are for crushing washed fruit (apple, pear, etc.) and extracting juice and can manufacture the fruit juice relatively at lower costs and in shorter time. The present invention provides the fruit juice manufacturing apparatus, comprising: a washing unit washing the fruit supplied from the outside； a feeding conveyor sequentially feeding the fruit washed by the washing unit； a crusher receiving the fruit fed by the feeding conveyor, crushing the fruit and generating a mixture in which fruit fresh is mixed with fruit juice； a juice extractor composed of a fruit extraction container filled with the mixture supplied by the crusher and a pressing plate positioned at an upper part of the fruit extraction container, and operated to be lead into the fruit extraction container by a hydraulic device to press the mixture filling the fruit extraction container for obtaining the fruit juice； and a fruit extraction container moving unit moving the fruit extraction container to get farther from the pressing plate such that the mixture discharged from the crusher is easily supplied into the fruit extraction container.본 발명은 과일즙 제조공정 및 이를 위한 제조장치에 관한 것으로서, 더욱 상세하게는 세척된 과일(사과, 배등)를 파쇄하여 즙을 짜내는 것으로 상대적으로 저렴하고 단시간에 과일즙을 제조할 수 있는 과일즙 제조공정 및 이를 위한 제조장치에 관한 것이다.본 발명에 따른 과일즙 제조장치는 외부로부터 공급된 과일을 세척하는 세척부와； 상기 세척부에 의해 세척된 과일을 순차적으로 이송하는 이송컨베이어와； 상기 이송컨베이어에 의해 이송된 과일을 공급받아 파쇄하여 과육과 과즙이 혼합된 혼합물을 생성하는 분쇄기와； 상기 분쇄기로부터 공급된 상기 혼합물이 채워지는 착즙통과, 상기 착즙통의 상부에 위치되고 유압기기에 의해 상기 착즙통으로 인입되게 작동되어 상기 착즙통에 채워진 상기 혼합물을 압착하여 과즙이 채취되게 하는 가압판을 포함하여 이루어진 착즙기와； 상기 분쇄기로부터 배출되는 상기 혼합물이 상기 착즙통에 용이하게 공급되도록 상기 착즙통을 상기 가압판으로부터 멀어지게 이동시키는 착즙통 이동수단을 포함하여 이루어진다.
