PURPOSE: A low-fat or nonfat instant coffee mix, and a producing method thereof are provided to use low fat milk or nonfat milk installed of vegetable bream containing saturated fat.CONSTITUTION: A producing method of a low-fat or nonfat instant coffee mix comprises the following steps: mixing nonfat milk with 50-60 deg C water to obtain a milk solution adding coffee concentrate having the concentration of 30-60brix into the milk solution, neutralizing the mixture in the pH of 6.3-6.6, and stirring and homogenizing the mixture at 50-60 deg C to obtain a solution and spray-drying the homogenized solution at the inlet air temperature of 170-190 deg C and the outlet air temperature of 80-90 deg C.
