The apparatus for separating flesh from a seed of a fruit, according to the present invention, comprises: a frame a first fruit support which is provided on one side of the frame, and supports one side of the fruit a second fruit support which is provided on the other side of the frame to be close to or separated from the fruit, and supports the other side of the fruit a separation unit which separates the flesh of the fruit supported by the first and second fruit supports and a separation unit driver which drives the separation unit between an initial position, where blades of the separation unit are disposed to be separated from the fruit, and a separation position, where the blades cut the flesh of the fruit while passing through the fruit and the separation plate separates the flesh from the seed. The separation unit includes: a plurality of blades spaced apart from each other in a circumferential direction around the fruit separation plates which are disposed on the rear side of each blade along the movement direction of the blades, and separate flesh cut by the blades from the seed and a separation unit main body which supports the blades and the separation plates.
