Provided is a method in which, when obtaining a phospholipid concentrate through a process of subjecting a concentrate of an ethanol extract liquid of cattle or poultry tissues to a degumming step and then recovering a gummy matter, the variation in the amount of phospholipids obtained each time the process is performed is suppressed. More specifically, provided is a method for producing a phospholipid concentrate from cattle or poultry meat, the method comprising (A) a step for mixing less than 7 parts by mass of water with 100 parts by mass of an ethanol extract liquid concentrate of cattle or poultry tissues, and (B) a step for subjecting the resultant mixture liquid to centrifugal separation at 2°C or lower.
