The present invention pertains to a mushroom extract, and a taste improving agent which are obtained by a production process that includes: a step for solvent extraction of at least one from among a mushroom of the genus Boletus, and a mushroom of the genus Amanita Pers. and a step for removal of a smell component from the solvent extract.
