The present invention relates to a process for extracting shrimp oil. In particular, the shrimp processing water (EPC) is recovered and subjected to a dissolved air flotation system (DAF) after addition of flocculant. The suspended and dissolved solids form aggregates recovered on the surface by a procedure called "skimming". The skimming is then directed into a horizontal centrifuge (decanter) to separate the solid phase (SOC) and the liquid phase consisting of water and shrimp oil. The liquid phase is pumped to the 3-phase vertical centrifuge to separate shrimp oil, water and solids. The solids recovered after the separator can then be added to the solid phase obtained after decantation. The shrimp oil obtained is very rich in astaxanthin and the resulting water contains very little organic matter and can be returned to the general effluent of the plant.La présente invention se rapporte ô un procédé d'extraction d'huile de crevettes. Particulièrement, l'eau de transformation de crevettes (EPC) est récupérée et soumise ô un système de flottation ô air dissous (DAF) après ajout de floculant. Les solides en suspension et dissous forment des agrégats récupérés ô la surface par une procédure appelée " écumage " ("skimming"). Le skimming est ensuite dirigé dans une centrifugeuse horizontale (décanteur) pour séparer la phase solide (SOC) et la phase liquide constituée d'eau et d'huile de crevette. La phase liquide est pompée vers la centrifugeuse verticale ô 3 phases pour séparer l'huile de crevette, l'eau et les solides. Les solides récupérés après séparateur peuvent ensuite être ajoutés ô la phase solide obtenue après la décantation. L'huile de crevette obtenue est très riche en astaxanthine et l'eau résultante contient très peu de matière organique et peut être renvoyée ô l'effluent général de l'usine.
