PROBLEM TO BE SOLVED: To provide a gelatinous food which contains a material dispersed uniformly and has spreadable nature and its production method.SOLUTION: A gelatinous food is obtained by melting a gelatinizer forming a first heat-resistant gel and a gelatinizer forming a second heat-reversible gel by heating in water, adding a material to the gel mixed solution and mixing together to disperse the material uniformly, gelatinizing the first gel, and charging the resultant mixture in a container and heat-treating at a temperature equal to or higher than the gelatinization temperature of the second gel, or heat-treating and then charging into the container, to obtain a gelatinous food with the material dispersed uniformly having spreadable nature.COPYRIGHT: (C)2016,JPO&INPIT【課題】具材を含有し、スプレッド可能な性状をなすゲル状食品であって、具材が均一に分散したもの、及びその製造方法を提供する。【解決手段】耐熱性の第1ゲルを形成するゲル化剤と、熱可逆性の第2ゲルを形成するゲル化剤とを水中で加熱溶解させてゲル混合溶液を形成し、このゲル混合溶液に具材を添加混合して均一に分散させ、第1ゲルをゲル化させて、前記第2ゲルのゲル化温度以上の温度で、容器に充填して加熱処理するか、又は、加熱処理して容器に充填することにより、具材が均一に分散し、スプレッド可能な性状をなすゲル状食品を得る。【選択図】なし
