The invention relates to manufacture of whey protein extracts, to infant formula and to reducing or preventing food allergy. The whey protein extract is produced from a whey protein-containing composition by contacting a whey protein-containing composition with an aqueous solution to form a sample including a soluble protein-containing component and an insoluble component； recovering the soluble protein-containing component from the sample； and acidifying the soluble protein-containing component, thereby producing the whey protein extract. Extracts produced by the method of the invention may be used in infant formula, as a dietary supplement or foodstuff.본 발명은 유청 단백질 추출물의 제조, 영아용 조제분유 및 음식물 알레르기를 감소 또는 방지하는 것에 관한 것이다. 유청 단백질 추출물은, 유청 단백질 함유 조성물을 수용액과 접촉시켜 가용성 단백질 함유 성분과 불용성 성분을 포함하는 샘플을 형성하는 단계； 이 샘플로부터 가용성 단백질 함유 성분을 회수하는 단계； 및 상기 가용성 단백질 함유 성분을 산성화하여 유청 단백질 추출물을 제조하는 단계에 의해서, 유청 단백질 함유 조성물로부터 제조된다. 본 발명의 방법에 의해 제조된 추출물은 영아용 조제분유, 식이 보충제 또는 식품에 사용될 수 있다.
