The present invention has application in the field of food safety and hygiene and relates to the combined use of origanum vulgare l essential oils. (oregano) and rosmarinus officinalis l. (rosemary) in synergistic concentrations as vegetable sanitizers, presenting itself as an alternative to the use of chemical sanitizers, aiming at the control of spoilage and pathogenic microorganisms in these products. The combined use of the essential oils cited exploits the synergistic effect of subinhibitory concentrations of each essential oil to promote control of contaminating microorganisms in vegetables. o emulsion of o. vulgare there. and r. officinalis l., which will serve as a material for vegetable application, will be obtained by dissolving the essential oils (1.25 - 20 µl / ml) with the addition of 1% tween 80, followed by applying the emulsion to vegetables for 5 minutes by soaking, and then rinse in drinking water for 30 seconds.a presente invenção tem aplicação na área de higiene e segurança de alimentos e refere-se ao uso combinado dos óleos essenciais de origanum vulgare l. (orégano) e rosmarinus officinalis l. (alecrim) em concentrações sinérgicas como sanitizantes de vegetais, apresentando-se como uma alternativa ao uso de sanitizantes químicos, visando o controle de micro-organismos deteriorantes e patogênicos nesses produtos. o uso combinado dos óleos essenciais citados explora o efeito sinérgico de concentrações subinibitórias de cada óleo essencial para promover o controle de micro-organismos contaminantes em vegetais. a emulsão dos óleos essenciais de o. vulgare l. e r. officinalis l., que servirá como material para aplicação em vegetais, será obtida pela dissolução dos óleos essenciais (1,25 - 20 µl/ml) com adição de 1% tween 80, seguido da aplicação da emulsão em vegetais por 5 minutos por meio de imersão, e de posterior enxágue em água potável por 30 segundos.
